Ingredients required:
For the Paneer Bhurji stuffing:
8 Small Capsicums
400 gm paneer
2 tbsp olive oil
4-6 garlic cloves minced
1 onion finely chopped
3 tomatoes finely chopped
1 tsp cumin seeds (jeera)
1/4 tsp turmeric
1/2 red chilli powder
2 tsp coriander powder (dhaniya)
1 tsp garam masala
1 cup corn
1 cup green peas
lemon juice from 1 lemon
salt (as per taste)
fresh coriander leaves
choppped
Preparation
method:
For the Paneer Bhurji:
- Heat 2 tbsp of olive oil in a non-stick pan and add the cumin seeds.
- Add the finely chopped onions and minced garlic. Also add salt to sweat the onion and bring out the flavors. Saute for 2-3 mins in medium heat.
- Add the finely chopped tomatoes. Add the turmeric, red chilli powder, coriander powder and garam masala. Again sauté it for 4-5 mins.
- You will see the oil begin to separate, add the corn and green peas.
- Once the corn and green peas are cooked (in about 5 minutes), add the finely chopped or grated paneer.
- Let it all cook for 8 - 10 minutes and keep stirring periodically to prevent the ingredients from sticking to the pan.
- Squeeze in the lemon juice and stir well.
For
stuffing:
- Preheat the oven to 350 degrees Fahrenheit.
- Coat a baking tray with olive oil.
- Carefully cut the crown of the Capsicum and remove the seeds from the inside. Save the crown.
- Stuff the capsicum with the Paneer Bhurji.
- Place the crown back on the stuffed capsicum.
- Bake at 350 degrees Fahrenheit for 30 - 40 minutes until the skin of the peppers begins to wilt.
- Take the baking tray out of the oven, garnish with chopped coriander leaves and serve it.
